- 2 medium zucchini
- 1 tablespoon The Groves on 41 Garlic Arbequina Olive Oil
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1/8 teaspoon salt
- Pinch of cayenne pepper
Preheat the oven to 450 degrees F. Line a baking sheet. Slice the zucchini lengthwise into six wedges. Toss the zucchini in Garlic Olive Oil. In a large zip-lock combine the Parmesan cheese, bread crumbs, salt, cayenne pepper. Add zucchini wedges to bag and toss to coat well. Place in a single layer on the prepared baking sheet and bake for about 12 minutes or until browned and crisp. Serve immediately. Serves four.
