Adapted from Chef Dallas of 10th Street Basque Cafe
- 2 lbs pork loin (not tenderloin)
- 5 whole garlic cloves, peeled
- 1 Tbsp dried parsley
- 1 Tbsp ground sage
- 1 Tbsp dried rosemary
- ¼ cup The Groves on 41 Garlic Arbequina Olive Oil
Preheat oven to 350 degrees. Crush the garlic cloves together with all dried and fresh herbs in a mortar & pestle. Add garlic olive oil and continue to crush, forming a paste. Rub paste over the pork loin. Place on baking sheet, fat side up. Put any extra past on top. Bake in preheated oven for approximately one hour to an internal temperature of 160 degrees. Cover loosely with foil and set aside to rest for 15 minutes. Slice and serve!
